				well i just cooked a steak on a propane grill.
			 
			this has been in the planning stage for about 3 years.  i have a cheapo weber kettle (got it free) that i LOVE!  i'm good with it.  with a charcoal chimney starter, getting the coals ready is not a big deal.  i still have 3 big bags of lump charcoal and a few bags of briquettes. for 3 years i have been eyeballing the weber propane grills. i cannot walk by a weber display without opening the lids, studying the specs..learning the pro/cons about SS grill grates vs enamel cast iron..and talking to all the weber salespersons. i keep hearing the siren's song... last week, i was in ACE (looking at bird feeders) and i did the weber walk. all the grills were marked down. sirens singing...a salesperson shows up and asked, "wanna buy a grill? how can i sell you one?" i told him i was waiting for the annual "friends and family" sale coming up..20% off. he said, "what if i give you an additional 25% off the current sale price?" SOLD! i bought a stainless weber genesis!! they assembled it and delivered it. i took some of it apart and put it back together correctly. i think i paid $460ish. originally marked $799. cooked my first propane steaks last night! easy peasy! they taste almost the same as my charcoal cooking..almost. i sliced some eggplants and grilled them for tonight's eggplant lasagna! now i'm searching for the perfect grill brush. hope it doenst take me another 3 years.

i seriously do.  everytime i am in texas..i do the smoker walk.  the california models you see at LOWES suck compared to the ones you see littered across texas.

			this is the brush i am looking for: from tool wizards. uses a cheap steel scrubber wad thing, that i can get at the chinese grocery store for pennies. (this is the go-to scrubber for wok cooks)..i might try to simply grab a pad with a pair of tongs.  if i didnt get the sale price, i would have stayed with my old setup:

			Grill brush? No No No!  You will scrape off all the good flavoring that comes with scorched fat and gristle! Man what a newbe... Listen, when your meat and what not are done just keep the heat on for another 10 minutes or so. That will burn off most of the stuff and what is left over will help the next slab of ribs, breast of chicken, flank of beef or any and all veggies you grill. Next time to fire up, keep it on for about 5 minutes before you use it. That allows more junk to burn off but also allows the grill racks to get real hot and make a nice grill line on your food.

			lube..? i get the grill hot. rocket hot. then i scrub the grate. then i dip a wad of paper towel into a puddle of veggie oil, and using tongs..i wipe down the entire grate surface. this way nothing sticks. you go in dirty, and delicate food like grill fish is destined for failure. i do this, no exceptions. newbie? pfffftht!

			Well I tell you what...I've been using propane and propane accessories long before you could walk and no true man that ever held a spatula over a blue flame would ever think of cleaning his grill like that I tell you what.  Why its just wrong, just wrong.

			BAH!  Get yerself a little bottle of liquid smoke. it'll last 5 lifetimes. Take a few drops (at the most) and dilute it with cooking oil and paint it on the meat prior to cooking on your gas stove, you won't be able to tell if it was cooked with charcoal or not. | ||
