Curing meat is something to research. Some get better and some get worse?

In the book/movie 'Shogun' the English were referenced to hang game for a long time until the point of uh unsanitary was reached before cooking.

Meanwhile I think it's common to hang cattle carcass whole in refrigeration for several days, and of course well aged Prosciutto is a delicacy.

I worked with a crazy Canuck for years, we still keep in touch even after my retirement...I've made various venison sausages for him over the years, and he once told me he caught on of his young sons sneaking to the fridge to sneak some of the salami...

So he gives me Venison in exchange for sausages.

One of my faves is Sausisson Sec, with Venison, Pork shoulder and back fat, and Figs marinated in Jack Daniels..

In the first 25 years of our marriage, up through getting the kids through college and out of the house, it was a rare sight indeed to spot any form of "store bought" meat in our freezer. I literally fed my family with my rifles (sometimes revolvers) and fishing poles. I hunted outside of my home state of Washington every year (some years overseas, but you don't bring that meat home, you leave it for the locals), sometimes multiple other states, ranging as far as the Midwest. I fished up and down the West Coast, mainly salmon, halibut, other bottom fish, and sometimes tuna.

At this point, I can take or leave any form of venison. And other people catch my fish, at least to feed me (I still love fly fishing, but pretty much catch and release). Beef is better. Venison may be a "treat" for those who don't eat much of it, but raising a family on it changes one's perspective of it.

I don't hunt as much as I used to. My goals have changed. It used to be purely to fill the freezer, and maybe a point of somewhat stubborn pride that I could "feed my own damn family". Now, I'm after just some peaceful time in the quiet outdoors. Most of my "hunting" is really more "dog walking" with my little buddy Ed, chasing our local pheasant or grouse. Muzzle loading shotgun, which I often don't even bother to load. All it really does is give me access to Game Department lands where I can let Ed run. Makes us both very happy.

Right. Most meats are aged at least some these days, wet being most common and dry being less common.
But those are already cleaned and butchered at least partially.
I too remember reading about the “aging” that blackthorn did to a peasant IIRC in Shogun, and they included it in both mini series I believe too.

As a kid in boy scouts, camping was fun. It was away from mom and dad, and with boys my age. And I had the body of a preteen boy. Fall down and just bounce uninjured, swim like a fish, run like the wind. Sleeping anywhere and not ache in the morning.

Like Milt, I discovered girls and things changed. I got into photography at age 14 while living in Hawaii. For some reason girls in bikinis were a constant source of my attention and photographs. There is a infinite supply and fresh new ones in Hawaii.

When I was in my early 20s I went "hunting" with my brother. I brought my camera as I had no interest at killing anything. I really made the other hunters at the camp mad that I had more deer sightings than they did, and I had the photos to prove it. I disliked the entire experience, when I did not have my camera in hand. Sitting in a tree stand was zero fun.

I don't get this either but I guess it's the trophy part of it which I don't really get either.
When you fish you let the big ones go because they don't taste as good and are the breeders.
I'd hunt still if I could practice catch and release doing it.
