I like panko better than ordinary bread crumbs for most deep frying. Hmm, I haven't had anything deep fried in a while. Must do something about that.

No. Boneless chicken was on sale at Metro 2 weeks ago. We stockpile.

My wife has banned me from Costco-type stores because I misbehave. The last time, many years ago, when they asked for my member card I clicked my heels & Nazi saluted them. My wife didn't see the humour.

What could be better for dinner than fresh all you can eat fresh peas from our garden for salad or asian stir-fry.........and 3 day marinaded chicken halfs in Italian Salad Dressing and just a "wee" bit of diced sweet Walla Walla onion to boost the flavor, tumbled in a spit/basket on a Infra-red BBQ burner over Alder Wood chunks for smoked meat bliss.

My series of craptastic food photos continues... (taken with a Gen1 droid in crappy lighting) but I digress.

Big-eye Tuna Quesadillas with red cabbage slaw...

Saw the recipe on an early morning Food Channel show... you know before they get into the stupid "cupcake wars" "chopped" etc...

I thought pairing cheese and tuna would result in major suckage and taste conflicts... but the sum of all the parts works very well

Tuna
Oaxaca Cheese
New Mexico Chilis *(there is a side bar here)
Lime
Red Onion
Red Cabbage
Tomato
Cuke
Cilantro
Mexican oregano (not the crap you smoked in High School)
Olive Oyl
S&P
Corn tortillas




Now to the tmi part of the post... do not read any further if mentions of pain and genitalia offend you!!!!

Stop do not read any further!!!

I was preparing the New Mexico Chilis, seeding, removing the ribs, pan roasting etc..... when the "Bladder Full" warning light came on. and rapidly changed from an intermittent buzz to a a full time bladder full designation.

So I exited the kitchen... entered the bathroom, opened my fly and grabbed my junk and relieved myself....

When I was relieved I washed my hands and returned to the kitchen...

The burning pain started about a minute later... I was in extreme knee buckling, eye watering discomfort for about 15 minutes while evil New Mexico peppers capsaicin wore off.... I considered jumping in the shower and washing with milk...Nope we dont have milk in my house...

*Note to self* after handling chilis wash hands thoroughly before touching sensitive areas of the body!!

Browned in a frypan & then 15 minutes in a 350 oven.

Stuffed Chicken Breasts With Mushroom Cream Sauce

4 boneless chicken (breasts skinned and trimmed)
4 prosciutto (slices thin)
Ľ lb cheese (bel paese, cut into 12 oblongs) – I sub’d gruyčre
8 asparagus (spears blanched 1 minute and trimmed to 4 inch lengths)
Ľ cup romano cheese (I sub’d freshly grated parmesan)
2 tbsp fresh parsley (minced)
olive oil
all-purpose flour
several mushrooms (thinly sliced)
1/3 cup marsala
1 cup whipping cream
salt
black pepper

1 Pound chicken breasts between sheets of waxed paper to thickness of 1/4 inch.
2 Arrange chicken breasts shiny side down.
3 Cover each with 1 prosciutto slice, add cheese in center, place 2 asparagus spears beside cheese and sprinkle with Parmesan mixture, then parsley. Roll up tightly & tie with string.
4 Preheat oven to 350 degrees.
5 Heat thin layer of oil in large skillet over medium heat.
6 Dredge chicken rolls in flour, shaking off excess.
7 Arrange seam side down in skillet and brown on both sides.
8 Transfer to baking sheet; pour oil over- do not wash skillet.
9 Bake chicken until tender, about 15 minutes.

For Sauce

10 Set skillet over high heat.
11 Add mushrooms and Marsala.
12 Tilt pan, heat wine and ignite.
13 When flames subside, boil until liquid is reduced by half.
14 Add cream and boil lightly until reduced to sauce-like consistency; season with salt and pepper.
15 To serve, set 2 chicken rolls on each plate, spoon Marsala sauce over and serve.

Edit: I also added ~3 oz of Chicken broth to the sauce with the mushrooms

Sockeye Salmon for the girls (dad nibbled on the crusty parts as he was preparing)

Sauteed in Canola Oil on med. heat about 15 min. per side...no seasoning needed!

Those girls are so spoiled. What am I say? My dog has gotten so used to getting something off the grill that when I don't have anything for him he begs. The butcher now throws in extra bones just for the dog.

That reminds me of something my Mom said once. The occasion was my step-father's memorial service. She had arranged to have several cold cut platters and there were a couple left over afterwards. She wanted me to take one home and I remarked - "Awesome - the girls would love some of this!" and she exclaimed "Oh no honey...that's too good for them..." I couldn't believe she said that! How can ANYTHING be TOO GOOD for your children?!?!?

Well - I don't know if mine are spoiled or not by this meal as Salmon is very nutritious and healthy and that is why I fed it to them....not as a "treat" but as health food. But perhaps their perspective was that of a treat - hard to say.

Friday night ritual... Pizza

Heat the stone to the max your stove can, slide the pie on it and turn the broiler on. When you are happy with the top, leave for another 3-5 minutes. Serve with red wine

Early Dinner...

Egg McMuffin home style;

Toasted French baguette, cheese, egg and Turkey bacon.

Don't knock the turkey bacon until you try the one from Costco. It taste great and is crispy out of the microwave. The only draw back is that it is only 25 calorie per large slice
