To hot and humid here to eat anything heavy or fire up the grill.. So I made something that needs no application of heat to prepare...

I found my self inexplicably at a local fish market, there must be some sort of auto pilot that kicks in on these early weekend drives..Walked out with some LI Sound lobster tails...

The next stop was for some limes and oranges, a Bermuda onion, no local tomatoes yet so hot house had to make due... I did grab two Serrano Chilis from my garden and a fistful of Cilantro. Had a cucumber that was a little premature.... but it ended up in the mix... Garlic and ginger were in stock...

Juice the limes and orange... 4:1 is a ratio I have been settling on....If its to astringent...a squirt of agave nectar works wonders

Ceviche!!

I was Delicious!! so refreshing...And leftover of this are better the next day!!

My photos suck... but just imagine Homer Simpson drooling while he pigs out on this..

I found bonito flakes - we do have them - 5 different brands in fact.

The jyl salad looks like corn, green onion & tuna - anything else?

(I will, of course, add some red peppa to it - I would not be allowed to return to Louisiana if I didn't.)

That's all it was.

Here's some recent stuff.

Salmon fillets, salted then left in the refrigerator for a few days. They sort of half cure, get translucent, like they are trying to become lox. Then barely sear and submerge in homemade pico de gallo with lots of lime juice.

Beef and mushrooms. Dinner tonight. I'm on a no-grains thing, so just meat, fish, eggs, fruit, veggies. I think I'm finally losing weight.

Mine was 151 last time it was checked, Sept of '11. TG, LDL, vLDL were okay (w/ normsl ranges), HDL was low.

My provider has an online system. I can look at prior labs and radiology reportd, everything is saved. I can email my doc, tell him my issues, set up labs before my visit, when I show up he has the labs and the visit is a lot more productive than the old way of office visit where the doc learns why I'm there and sends me for labs then another visit to discuss the labs. It is sort of amazing to me that this technology is still somewhat "new" in general medical practice, and that not that many patients or doctors use such technology. Medicine is remarkably backward in some ways.

Mine was 200, and all the ratios were good.. However my Dr. thought that since my weight is unfortunatley trending up, that he wanted me on low dose lipitor.. Im due for a physical and will have the new numbers soon...

I just love to eat well.... had soup dumplings for lunch today, though did buy a nice piece of Bigeye Tuna that will go on some quesadillas tonight, with leftover ceviche as an app....

I went to a tapas bar this weekend and had the most awesome stuffed peppers. Large jalapeño peppers, slit on one side and hollowed out. Stuffed with cheese and ham. Not sure what kind of cheese, sort of white and creamy. Ham was in thin sheets, rolled. Battered and deep fried. Delicious.

No. Weber natural gas grill preheated until it practically glowed. I had smoked ribs last night & the grease caught on fire which added to the intense heat. About 3 minutes per side.

It was my 1st attempt at the recipe & it was really easy & excellent. The panko stays crunchy which makes it different. I also had lemon on the side in addition to the yogurt dip.
