No Balut... They sell Balut in some stores in Woodside, Elmhurt, and Flushing Queens..One of my co-workers is Pinoy, We'll goo to lunch once in awhile, and he disappears and come back with Balut... No, thank you, not for me..

After seeing an Argentinian grill fired with wood, to say nothing of Robert & Louise in Paris (thank you Anthony Bourdain for ruining that place), I've been wanting to cook steaks over wood for over a year now. Necessity being the mother of invention, I thought I had more charcoal than I did for a NY Strip marinating all day in BBQ sauce, so I used a few chunks of cherry after the coals got going. Without commenting on the flavor, the spectacle alone makes it an absolute necessity in the future. And it was delicious with an excellent char. The fat was sublime.

Salmon and ramen with chili lime sauce. Tasty enough. Next time I'll do black an chili pepper spicy shrimp with the sweet chili lime. Great with a Riesling

Caught a decent Rainbow (1.75 lbs) while staying with the In-Laws in Wyoming this weekend. Baked whole with rosemary, lemon, butter, etc.
Plated with whipped garlic mash (crema infused) and topped with marinated spring onion.
Red cabbage tossed in a mango vinaigrette for the outer edge.







Cooking on a Porsche 911- The compound butter made the difference.

Lamb chops with a lemon thyme shallot butter sauce and asparagus. Delightful and a nice change of pace. Love simple flavors sometimes.

Eight hour dry brined filets (salt, pepper & garlic powder) w/ sautéed onions, mushrooms and baked potato.



TEC Infrared gas grill



Topped with a Red Miso Compound Butter while resting. I'm all about the Miso these days!
