John - put the advantages pretty well. Cu has a much higher thermal conductivity than iron AND the thermal "inertia" (specific heat capacity is low).

Both mean good cookin'.

The $150 price tag (for ONE freakin' skillet - Cuprinox) is too much for me.

How thick is the Cu part on the All-Clad ones - anybody know?

My favorite two cooking tools are my 12" cast iron skillet and cast iron dutch oven. It took a while to the get dutch oven seasoned just right but it's finally there.
Heavy bastage that it is, it sure cooks nice.

My wife knows that if either one ends up in the dish washer or get touched by a scouring pad, it's all over

I did fried rice with peas, carrots, shallots and green onions with a pound of curry shrimp all in the one pan tonight. mmmmmmm It works great as a standard frying pan also so I think it's all a guy needs

I have a tendency to overheat all my pans which is why I should be kept away from all non-stick stuff and why I was afraid of a carbon steel wok (too much cleaning when burnt).

FWIW my 5 year old told me my fried rice was "just as good as the mall's" so I guess that means I have arrived

I read a discussion on a cooking forum on this topic. It sounds like the all clad copper core pots are mostly aluminium core with a thin copper layer. No one was posting any pics of pots cut apart though. Look, when your liberal friend goes to Paris have them bring you back a genuine thick French copper pan. You're not going to spend "vastly" less for a copper core stainless exterior pan and if you want the patina only the copper exterior will do it.

I would like a new wok too. Mine has a flat bottom and nonstick that is wearing off. The traditional round bottom requires a wok ring over the burner but acts as a reservoir of hot oil. You can move food between the hot oil and the cooler sides. This also requires a large wok with gently sloped sides. Mine fails that test too.

Gat an All-Clad and a few bottles of BarKeeper's Friend. Great cookware and an excellent cleaning/polishing product to keep it looking new!

- you can re-season cast iron if it gets messed up in a dishwasher

- a fair amount of data indicates that Teflon can cause problems for humans. Teflon will kill a bird that is kept in the house!

- thanks but it could be a while before anybody goes to Paris. Friends got divorced, lost $$ in the debacle, etc. Exchange rate is not too great now either.

I'll keep looking around on eBay and locally. Problem is I can't tell how thick the copper ones on eBay are.

My pan of choice is 22" and is about 2 1/2" deep. I cook for 6 with it


it's aluminium ans came from smart and final for $30!


by the way they have 10#'s of filet mingon for $60 (you cut it to your specs)

and huge 20# slabs of tri-tip with genorous amounts of fat left on top for $3.00 a pound, I think that I need to smoke one!

lastly they had some "atomic horseradish" yes, it is.

Just as good as the Mall? Mall restaurants hires teenyboopers at minimum wages to cook in their restaurant.

Two years ago...ahhh that would be 2007 I found 3 nice Bourget Copper pans (10 inch fry pan, 12 inch Chefs pan wt lid and a 8 inch Chefs pan with lid) for $100. Out of the same auction I bought a nice Itie Meat Slicer that retails for $600 for another $100. All told the value was about $1200 worth of stuff for two bills.

I bought a Griswald No 12 Fry pan on the Bay for $150 which is about the going rate...it seems that is the pan I use every day. Just wipe out the grease and crude and heat er up..it seems that I don't all those fancy schmancy pans after all.

I have been given a couple Ruffoni hammered copper pieces (Gratin Pan and a Stockpot). Damn, the stockpot was $400!

Anyway, it is SUPER high quality and gorgeous. I get a workout with the Barkeeper's Friend cleaning the stuff about every other week though...

We remodeled our kitchen a couple years ago. I bought and installed a Viking 36" Dual Fuel Range. Therefore, I felt compelled to replace all our plastic handled cookware. I settled on a cheap set of Cuisinart cookware and honestly, am very happy with it. It has held up well and cooks very evenly.

And, FWIW, the Viking Range is AMAZING!

Try Twinkle. No workout. Rinse pot w/ hot/warm water, wipe on the paste using the supplied sponge, watch the oxidation magically transform to gleaming copper, maybe rub sponge a little bit on any stubborn spots, then rinse it off and dry the pot. Takes about 2 minutes. Costs about $3 for a little tub that will last a few months. Find at most hardware stores. Be sure to get the Twinkle for copper, not the Twinkle for silver. We use the latter for the silverware, it works fine but not as magical as the Twinkle/copper.

Or even in my hand at a store?? Say, a used goods store.
