Short of that impressive setup a few posts up what is the most user friendly sharpening system?

Need something good for kitchen knives as well.

Systems like this are really popular right now. There are lots of options and you can get a full setup for about $100 or less. There are also lots of videos on YouTube on the subject.

Search "sharpening system" (your words) on Google.

I use the KME precision with base ……some of our kitchen knives are too large for it though…..

It’s user friendly if you have a basic interest in understanding how to properly sharpen a blade and an understanding of what is a proper angle for the edge you are sharpening

Also, my results got better once I got one of these so that I know exactly what I am doing regarding the angle

I have a Lansky system which is basically the same, but much less fancy. I've always used it for my pocket knives.

I now free-hand on diamond plates or water stones.

Not at all. Instructions show different angles, speeds and belt for different knife types.
Easily make a cheap knife stupid sharp.

My grandfather’s switchblade.

I’d like to get it fixed up a little bit, but definitely not over restored it. The blade lock is wonky. It won’t always stay open. That and fix the broken handle side.

I would leave that as is. Preservation only and good display case.

Too big for me to embed...a group of old guys called "The slip joint cartel"...all custom makers of old style pocket knives. I'd be afraid to ask a price...fun video, 15 minutes or so..
