cheese eaters?

Do you like cheese, specifically interesting cheese?

What cheeses do you like? How do you eat them, and what accompanies them when you eat them?

I love cheese, but I'm only just starting to experiment with the more unusual or strongly flavored cheeses.

My favorites are usually mild soft or semi-soft cheeses, but so far I've liked everything that I've tried.

Stilton is my most recent experiment. I quite like it. The first bite or two is really strong, but after that, I guess my nose gets used to the smell and the flavor mellows a bit. I guess I'll have to buy some pears.

I've got my first batch of just Stilton in the fridge now. Before this I had some "Double Gloucester w/Stilton".

I grew up in England- the cheese there rocks. Much better than the crap here in the US. It depends what you're going to do with it- on toast I'd have Red Leicester, in a sandwich Cheshire, on a burger Cheddar, on a cracker Wensleydale. Safeway used to sell Cheshire- but they quit that so now I buy the sharpest Cheddar thay have and deal with it.

I like aged dry peppercorn jack. "Peppato"

If you ever make up to Sonoma, check out the Sonoma Cheese Factory store on the square. They have a cold case with about 20 different Jack varieties you can sample 'til you're stuffed.

also, at Dean and DeLuca upvalley in St. Helena they have a huge selection.
Acrossed the street at V. Sattui winery you must try the three year old Gouda. Crazy sharp!

I also like Gorgonzola, Brie, sharp cheddar, smoked cheddar, Munster, Asiago, pepper jack, string cheese, Gruiyere, etc.

You ever had baked brie with jalepeno jelly?

The Kroger here has some interesting cheeses in their deli section, but when I really want to spend some money on cheese I drive into Houston to the closest Whole Foods. They have a huge cheese section with cheeses from around the world.

Havarti. Stinks bad but still love the stuff. Hard to get good stuff in the US but Europe is wonderful if you like cheese.

I've seen a couple of recipes for baked brie, but not tried any yet. The Whole Foods here had a brie sampler one day where they spread the top of the brie with fig preserves and put out little melba toast crackers. Man, that's some tasty stuff.

Baked Brie:

Buy some frozen puff pastry dough.

Take a wedge of cheese and set it on top of piece of the pastry dough.
Fold the edges back on itself so the entire wedge it wrapped up.

Egg wash:
one egg and a little water. mix.

use a disposable paint brush or a pastry brush and brush the dough.
You can cut decorative pieces of dough and stick them on top of the wedge. ( leaves, scrollwork, Porsche crest ). touch with egg wash.

Bake at 350° until golden brown. maybe 20 minutes.

Serve with a side dish of Jalepeno jelly and sliced baguettes.

Have you tried the goat cheese?

take baguette slice, spread with goat, place a warm roasted garlic clove on top. Maybe a bit of chopped chives.

Look up "Heluva Good" on the internet. They have some interesting cheeses.

Personally, I have seldom met a cheese I did not like....

Am working out of Dubai for a while and the local Carrefor markets have at least 20 different goat cheeses!

We are going there every time we are back in town and sampling one of each, with the olives (over 40 varieties of those) and some excellent red wine.
