Salted fish fried rice is good, there used to be a restaurant in Dallas where I was able to get that. Still, it doesn't compare to chicken fried rice made with chicken fat. I imagine duck fried rice made with duck fat would also be good, maybe I should make some...
Chicken fat sounds scary to most people but it's in a lot of legit Chinese food and any real bowl of ramen will have some, too. I made some Yangzhuo fried rice yesterday, it was pretty tasty. You should find some Chinese sausage, or run down to SF and buy a couple pounds of char siu to stockpile in the freezer, so you won't have to resort to using Spam next time. Gotta be a project down there somewhere you need to visit... |

Yep, I had figured that out a while ago. Wondering why it took you this many years to take advantage of the family connections to learn the fine art of Chinese cooking...
I would have been all over that... I'm not Chinese but I spent some time growing up in Singapore, so Asian food is in my blood. If I had sushi rice and nori laying around, the last thing I'd pair with them is Spam. Any fish, no Spam. Spam is for frying and eating between slices of bread, when you lack any other meat. Just Sayin'... |

personally, i like how we all have different food taste. ever since i dated a Hawaiian lady, back in the day..i got hooked on Spam. as far as chinese cooking. i'm ashamed to admit, i got lazy. my stepdad was a pro chinese chef..i just kinda ate. didnt cook so much chinese food. i missed that boat..i regret that. at the end, when his health was failing i ramped it up..and started learning. buying the wok was the last piece of the puzzle. i got good using a skillet at home, but i had to cook ingredients separately.

Another better than average lunch day. Roast chicken, caramelized onions, carrot, avocado salad with cilantro and fresh squeezed lime on a bed of spinach. Don't be stingy with the lime. Nice with a gin & tonic.

I'm really enjoying the seafood posts.....I think you guys are onto something here!
I had some haddock the other night that was delicious! Speaking of seafood....a head's up for the next "Anthony Bordain" special - this time he's in Newfoundland! ![]() From the segment...a seafood tower....yum! ![]() And Moose meat! ![]() Part of the segment discusses how Newfoundland has had to cope with the reduction in cod fishing due to diminishing numbers. I'm looking forward to watching it. I think it will be on this weekend - probably late, of course....yawn.... ![]()

OK - picked up a new cookbook from eBay. It's a vintage Betty Crocker and the whole reason I bought it was for the illustration by Frank Lacano.....
![]() But - it also has a lot of great recipes in a vintage format and I love the spiral binding!

i am EFFEN loving my WOK!!!
i think i have homed in on how to handle the stir fry. i used my stove-top to cook maybe three things since i got the setup for my backyard. not counting hardboiled eggs and ramen ![]() i rediscovered the humble noodle! last night, i cleared out some of my hold outs in my veggie drawer. that red meat was one single Chinese sausage. BOOM! noodle stirfry.
